Smoked Pineapple Ginger Beer Mocktail

INGREDIENTS
CINNAMON SIMPLE SYRUP
  • ½ cup sugar
  • ½ cup water
  • 2 large cinnamon sticks
GINGER BEER PINEAPPLE MOCKTAIL
  • 2 tbsp. (medium pinch full) loosely packed mint leaves 
  • 1/2 teaspoon finely chopped fresh ginger
  • 6 tbsp. lime juice
  • 3/4 ounce cinnamon simple syrup
  • 1 1/2 ounces pineapple juice
  • 3 1/2 ounces ginger beer
  • Pig & Nut Premium Wood Chips

Optional Garnish 

  • Lime Wedge
  • Pineapple Leaf
  • Luxardo Maraschino Cherry
CINNAMON SIMPLE SYRUP
  1. Combine all the ingredients in a small saucepan.
  2. Cook over medium-high heat, stirring occasionally until sugar has dissolved, about 5 minutes.
  3. Remove from heat and allow the cinnamon sticks to steep in the sugar water for 30 minutes.
GINGER BEER PINEAPPLE MOCKTAIL
  1. Muddle ginger, mint and lime juice in a cocktail shaker.
  2. Add pineapple and cinnamon simple syrup.
  3. Shake with ice until cold, about 30 seconds.
  4. Double strain, by pouring the mocktail through the shaker and then through a fine mesh strainer directly into two glasses filled with ice. 
  5. Top with ginger beer, stir to combine. If needed, top with more ice.
  6. Optional: Garnish with a pineapple leaf, lemon wedge and Luxardo maraschino cherry 
  7. Smoke your cocktail with your choice of  Pig & Nut premium smoke chips using the wood topper or smoke chamber. We encourage you to experiment here with our different types of Pig & Nut premium smoke chips to find your flavor profile preference.
  8. Serve immediately and enjoy!
